We believe that banting doesn’t mean you have to skimp on all your favourite foods and we’re going to show you how.
This is Urban Simplicity’s Family favourite recipe which is not only easy, cheesy, and delicious but also banting friendly and gluten free.
Time: 45 minutes
Yield: 2 Medium Pizzas or 1 Large Pizza
Difficulty: Easy
The best thing about homemade pizza is that you can bring the whole family together for pizza and movie night or a fun Sunday lunch. Everyone can choose their own toppings or you can try our family favourite.
Ingredients:
Pizza Base:
1 x Banting Blvd pizza base premix (available here: https://www.urbansimplicity.co.za/product/pizza-base-premix/)
2 x Large eggs
1 Cup milk
2 T Olive Oil
Topping:
Tomato paste or cream cheese
500g Bacon
1 Onion
1 Red pepper
500g Button mushrooms
2 t Crushed Garlic
1 Avocado
2 Rings feta cheese
1 ½ Cups mozzarella cheese
Pink Salt and freshly ground black Pepper to taste
Method:
Preheat the oven to 200 and cover your baking tray or pizza dish with baking paper.
Chop up the onion, mushrooms, and red pepper.
Whisk the eggs, milk and oil together then add in the pizza base premix. Mix until combined and let it sit for 10 minutes. The consistency should be slightly crumbly.
While you wait, fry the bacon until crispy and add in your veggies and garlic. Set it aside.
Cover your hands in a little bit of oil and divide the base mix into two equal balls. Flatten and shape your pizza base directly on the baking paper. You could use a rolling pin, but we prefer the hands on approach.
Bake for 10 minutes.
After 10 minutes remove the base(s) from the oven and spread an even layer of tomato paste or cream cheese. You can decide on the thickness.
Add the bacon, mushroom, onion and red pepper, and crumble a ring of feta over the top of each pizza. Don’t be stingy – the base will hold a generous layer of toppings.
Chop and add the avocado and season to taste.
Now add as much cheese as you want and put it back in the oven for about 10 minutes or until the cheese is bubbling and melted.
Let it cool for a minute or two and slide the pizza off the baking paper and onto a plate for cutting and slicing.
Let the wolves descend and eat as much as you please – its guilt free.
