I love leeks. They are homey and comforting, and make me think of Christmas. If I could add them to every dish, soup, stew and serve as a side to every meal I would.
These delicious, silky delights will add a something extra to your Christmas spread, whether its a roast, or a braai.

Time: 40 Minutes
Yield: 4 Servings
Difficulty: Easy
Ingredients:
15 – 20 Baby Leeks
2 Tbsp Butter
1 Tbsp Olive oil
Garlic
2 tsp Chopped fresh Thyme
Salt and Pepper
Method:
Wash the leeks and remove the tops.
Blanch the leeks in salted water and drain properly.
Mix the garlic, thyme, salt, pepper and oil in a bowl. Add in the leeks and make sure they are nicely coated with the mixture.
Place the leeks on a roasting tray and cover with the butter and excess seasoning mixture and bake for about 20 minutes or until beautiful and golden.
Serve hot.
I have put these in a roasting tray with my meat and other veggies to save some time and effort, in this case, just keep them separate.
Everyone will ask for more, so double up the recipe if you want. Even better, double it up so you have some left over for boxing day!
